WINEMAKING & VINIFICATION
The natural grass is kept between the rows and the ground under the vine-plants is worked mechanically to galvanize the microbial life and push the roots to go deeper. The property is certified HEV level 3 (High Environmental Value, the highest level of French environmental certification for farms).
The harvest picked and selected manually, is pressed carefully. Then after pre-fermentation operations made with carbonic gas to protect grapes and musts from oxidation, the alcoholic fermentation is made in new barrels. The wine is aged for 8 months on lees and stirring.
Very bright robe, a complex nose of citrus fruits and woody hints, a beautiful minerality and a fleshy mouth.
